Almond Apple Crunch with Homemade Cinnamon Granola

If you want a quick and easy breakfast that’s sure to power you up with the goodness of almonds, fruit, yogurt, and granola, we’ve found the perfect dish. Our Almond Apple Crunch with Cinnamon Granola is super easy to make and really healthy too! 

Almond Apple Crunch 

  • 1 apple, peeled, cored, and cut into cubes
  • 1 cup of granola (recipe below)
  • 1/2 cup plain yogurt
  • 1/4 cup almonds
  • 1/2 cup almond butter
 
In a serving bowl, mix together the yogurt and almond butter until well combined. Fold in the granola then the apple and almonds. Serve. 
 
P.S. This recipe also works great with pears!
 
Cinnamon Granola
  • 1 cup old-fashioned oats
  • 1 tablespoon chia seeds
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons honey
  • 1 tablespoons canola oil
 
Preheat the oven to 300 degrees. Spray a cookie sheet with cooking spray and set aside. In a mixing bowl, combine oats, cinnamon, nutmeg and chia seeds until well mixed. Add the oil and honey. Mix until everything is well coated. Then, spread the granola onto the cookie sheet. Bake for 15 minutes, stirring halfway through. Let cool and store in an airtight container.

Green Bean Almond Saute

Looking for a quick and easy side dish that can 
help you up your almond intake? Try tossing in some almonds with your green beans! Besides adding just the right amount of crunch, almonds can punch up the flavor in your green beans and make this ordinary side feel extraordinary. Here’s a quick recipe for you to try the next time you want to spice up everyday green beans: 
 
Green Bean Almond Saute
1 tablespoon butter
1 tablespoon grapeseed or canola oil
1/2 lb green beans, washed and with the tips removed
6 cloves of garlic, peeled and thinly sliced
lemon juice
salt and pepper
 
In a large pan over medium heat, melt the butter and add the oil. Once teh butter stops foaming, add green beans, salt, and pepper. Toss and sautee for a minute or two. Then, add the garlic and sliced  almonds and cool for a few more minutes. Add more salt and pepper to taste if needed. Once the garlic browns, remove from heat, plate, and add a spritz of lemon juice. Serve and enjoy!
